Black Forest Cheesecake with Cherry Topping
Black Forest Cheesecake is a rich, elegant dessert that features a silky chocolate cheesecake base, crisp chocolate cookie crust, a vibrant cherry topping, and optional whipped cream. Inspired by the classic German cake, this no-fuss version is perfect for holidays and special occasions. Creamy, chocolatey, fruity, and visually stunning—every bite is a celebration.
Ingredients
Method
- Preheat oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a bowl, combine chocolate cookie crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the springform pan. Bake for 10 minutes. Set aside to cool.
- In a large bowl, beat the cream cheese and sugar until smooth and creamy.
- Add sour cream and vanilla extract. Beat until combined.
- Add eggs one at a time, mixing just until incorporated after each addition.
- Stir in the melted chocolate until the mixture is smooth.
- Pour the filling over the crust and smooth the top.
- Bake for 55–65 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
- Remove from the oven and chill in the refrigerator for at least 4 hours, preferably overnight.
- Before serving, spoon cherry pie filling over the top of the cheesecake.
- For whipped cream: Beat the cream, powdered sugar, and vanilla extract until stiff peaks form. Pipe or spoon around the edges or on top as desired.
Notes
- Use full-fat cream cheese and sour cream for best texture
- Don’t overmix the batter once eggs are added
- Cool the cheesecake gradually to avoid cracks
- For deeper flavor, add a splash of kirsch or almond extract to the cherry topping
- Chill overnight for optimal slicing and texture
- Decorate with whipped cream rosettes and chocolate shavings for a bakery-style finish
- Store leftovers covered in the refrigerator for up to 5 days or freeze slices for up to 1 month
