Cheesy Bacon Hasselback Potatoes with Parmesan and Chives are crispy-on-the-outside, fluffy-on-the-inside potatoes loaded with melted cheddar, smoky bacon, and a sprinkle of parmesan and fresh herbs. Baked in garlic butter and finished with chives, they’re an indulgent side or stunning main.

- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
- Wash and dry the potatoes. Using a sharp knife, slice each potato into thin slits about 1/8-inch apart, being careful not to cut all the way through. Place a wooden spoon or chopstick on either side of the potato to prevent cutting through.
- Place the potatoes on the prepared baking sheet. Brush each one generously with olive oil or melted butter, making sure to get oil into the slits. Season with salt, pepper, and garlic powder.
- Bake for 45 to 50 minutes, or until the potatoes are tender and the edges are crispy.
- Remove from the oven and sprinkle shredded cheddar cheese and crumbled turkey bacon evenly over the tops, tucking some cheese into the slits if desired. Sprinkle with Parmesan cheese.
- Return the potatoes to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly. Sprinkle with fresh chopped chives before serving.
