Ingredients
  

  • For the cookie dough:

  • ¼ teaspoon salt

  • 1 ½ teaspoons ground cinnamon
  • For the glaze:
  • 1 cup powdered sugar
  • 2 –3 tablespoons milk
  • ½ teaspoon vanilla extract

Method
 

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
  4. Divide the dough in half. Roll each half between two sheets of parchment paper into a rectangle about ¼ inch thick. Chill for 30 minutes.
  5. In a small bowl, mix together the brown sugar and cinnamon for the filling.
  6. Remove one rectangle of dough from the fridge. Brush with half the melted butter and sprinkle with half the cinnamon sugar mixture.
  7. Starting from the long side, carefully roll the dough into a log. Wrap tightly and freeze for 30 minutes to firm up. Repeat with the second half.
  8. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  9. Slice each log into ¼-inch rounds and place cookies on the baking sheet about 2 inches apart.
