
Creamy Dijon Chicken with Mushrooms The One Pan Skillet Dinner
Golden-seared chicken breasts simmered in a rich and creamy Dijon mustard sauce, packed with sautéed mushrooms, garlic, and thyme. A comforting and elegant one-skillet dish perfect for both weeknight dinners and special occasions.

- Season chicken breasts on both sides with salt and pepper.
- Heat olive oil and butter in a large skillet over medium heat. Add the chicken breasts and sear for about 5–6 minutes per side, until golden and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the sliced mushrooms. Sauté for 5–6 minutes until browned and softened.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Pour in the chicken broth and stir, scraping the bottom of the pan to deglaze. Let it simmer for 2–3 minutes to reduce slightly.
- Stir in the Dijon mustard and whole grain mustard (if using), followed by the heavy cream and thyme. Stir well and let it simmer for 3–5 minutes until the sauce thickens.
- Return the chicken to the skillet and coat it in the sauce. Let it simmer together for another 2–3 minutes to warm through.
- Garnish with chopped fresh parsley before serving.
Notes
- Cremini mushrooms give the sauce a deeper flavor, but white mushrooms work well too.
- Don’t boil the cream—gentle simmering creates the best texture.
- Whole grain mustard adds flavor complexity but is optional.
- Use an instant-read thermometer to avoid overcooking the chicken.
