Method
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning or 2 tablespoons homemade taco spice blend
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies (such as Rotel)
- 1 cup beef broth
- 4 oz cream cheese, cubed and softened
- 1 cup shredded cheddar or Mexican blend cheese
- Salt and pepper, to taste
- Optional toppings: sour cream, green onions, tortilla strips, cilantro
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if needed.
- Add diced onion and cook for 3 to 4 minutes, until softened. Stir in garlic and cook for 30 seconds until fragrant.
- Sprinkle in the taco seasoning and mix well to coat the beef and onions.
- Add black beans, corn, diced tomatoes with green chilies, and beef broth. Stir to combine and bring to a simmer.
- Stir in the cream cheese and shredded cheese. Let it melt slowly into the soup, stirring often, until smooth and creamy.
- Simmer the soup on low heat for 10 to 15 minutes to allow flavors to blend. Adjust seasoning with salt and pepper to taste.
