- In a shallow bowl, whisk together the flour, cornstarch, salt, pepper, garlic powder, onion powder, and paprika.
- In a separate bowl, whisk together the eggs and milk.
- Dredge each cube steak in the flour mixture, then dip into the egg mixture, then back into the flour mixture. Press the coating into the steak to ensure it adheres well.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the steaks and fry for 3 to 4 minutes per side, or until golden brown and crispy. Do not overcrowd the pan; fry in batches if needed.
- Transfer cooked steaks to a paper towel-lined plate to drain. Keep warm.
- For the gravy, drain the oil from the skillet, reserving 3 tablespoons of drippings. If not enough, use butter to make up the difference.
- Over medium heat, whisk the flour into the drippings and cook for 1 to 2 minutes to form a roux.
