- Heat vegetable oil in a large skillet over medium heat. Add the ground beef and cook until browned. Drain excess fat if needed.
- Add garlic, ginger, and chopped onion to the skillet. Cook for 2 to 3 minutes until softened.
- Stir in shredded cabbage and carrots. Cook for another 3 to 4 minutes until the vegetables are wilted.
- Add soy sauce, oyster sauce if using, and sesame oil. Mix well and cook for 1 more minute. Remove from heat and let the filling cool slightly.
- Lay an egg roll wrapper on a clean surface with one corner pointing toward you (diamond shape).
- Place 2 to 3 tablespoons of filling near the center. Fold the bottom corner over the filling, then fold in the sides. Roll tightly toward the top corner. Seal the edge with a little water.
- Repeat with remaining wrappers and filling.
- Heat vegetable oil in a deep skillet or pot to 350°F (175°C). Fry egg rolls in batches until golden brown and crispy, about 2 to 3 minutes per side.
- Drain on paper towels. Serve warm with your preferred dipping sauce.
