- Flatten the chicken breasts to an even thickness (about ½ inch) using a meat mallet.
- Set up three shallow bowls. In the first, add the flour. In the second, whisk the eggs with 1 tablespoon of water. In the third, combine the Romano cheese, breadcrumbs, salt, and pepper.
- Dredge each chicken breast in the flour, then dip into the egg mixture, and finally coat in the breadcrumb-Romano mixture, pressing firmly so it sticks.
- Heat olive oil and butter in a large skillet over medium heat. Add the chicken and cook for 4–5 minutes per side, or until golden brown and cooked through. Transfer to a plate and set aside.
- In the same skillet, add the minced garlic and cook for about 30 seconds. Add the chicken broth and lemon juice, scraping the bottom of the pan to release any browned bits. Simmer for 3–5 minutes to reduce slightly.
