Stuffed Bell Peppers with Pizza-Inspired Filling are a delicious low-carb take on pizza, packed with savory sausage or pepperoni, marinara, melty mozzarella, and Italian herbs all baked inside tender bell peppers. A cheesy, hearty twist on a weeknight favorite.

Ingredients

  • 4 large bell peppers any color, halved and seeds removed
  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 pound ground beef or turkey
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes optional
  • 1/2 cup pizza sauce or marinara sauce
  • 1/2 cup diced mushrooms
  • 1/2 cup chopped black olives optional
  • 1/2 cup chopped turkey pepperoni or cooked turkey sausage optional
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Method

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  2. Place the halved bell peppers cut-side up in the baking dish. Lightly drizzle with olive oil and sprinkle with a little salt. Bake for 10 to 12 minutes to soften slightly. Remove from oven and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened.
  4. Add the garlic and cook for another 30 seconds until fragrant.
  5. Add the ground beef or turkey. Cook until browned, breaking it up with a spatula. Drain excess fat if needed.
  6. Stir in Italian seasoning, red pepper flakes if using, pizza sauce, mushrooms, olives, and turkey pepperoni or sausage. Simmer for 3 to 4 minutes until heated through. Taste and adjust seasoning with salt and pepper.
  7. Remove from heat and stir in 3/4 cup of the shredded mozzarella.
  8. Spoon the filling evenly into each pepper half. Top with remaining mozzarella and sprinkle Parmesan over the top.
  9. Return to the oven and bake for 15 to 20 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  10. Garnish with chopped basil or parsley if desired. Serve warm.

Notes

  • Pre-bake peppers for even cooking and better texture
  • Use a thick pizza sauce to prevent sogginess
  • Customize with your favorite pizza toppings
  • Top with a mix of mozzarella, parmesan, or Asiago cheese
  • Serve with garlic bread or cheesy biscuits for a full pizza-style meal
