- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine all chicken meatball ingredients. Mix until just combined. Do not overmix.
- Roll the mixture into small meatballs (about 1 to 1 1/2 inches in size) and place them on the prepared baking sheet.
- Bake for 15 to 18 minutes, or until the meatballs are cooked through and lightly golden.
- While the meatballs are baking, whisk together all peanut sauce ingredients in a small saucepan over medium-low heat. Cook gently for 2 to 3 minutes, stirring frequently, until smooth and warmed through. Add a bit of warm water to thin the sauce to your desired consistency.
- Once the meatballs are done, transfer them to a large skillet or pan. Pour the peanut sauce over the meatballs and toss gently to coat. Simmer for 2 to 3 minutes on low heat to let the flavors meld.
